The black and green olives differ. The black are picked when they are ripened, whereas the green when the fruits are not ripe. That`s makes a few differences in taste. Common perception is that the black are lighter, more fruity, oily and less crunchy. Due to the fact that they are ripened there is about half of the amount of sodium in them compering to the green, as they are processed on a different way.
